
Tea eggs
Cook the eggs first, then crack the shells and simmer them in spiced tea.
Separate and shorten enoki, cook it thoroughly and season gradually.

Keep enoki refrigerated as labeled and check the use-by date. Trim the base, separate, wash and cut into manageable lengths. Keep raw mushrooms away from ready-to-eat food and wash hands and equipment afterward.

Preparation ↗Cover the enoki with drinking water in a pot with headspace. Bring the whole pot to a boil and stir gently to immerse all mushrooms.

Boiling ↗Set a 3 min first check when the whole pot boils. Keep boiling, stir occasionally and cook thoroughly according to the package. Never serve enoki raw or add it raw as a final garnish; continue cooking if needed.

Boiling ↗After cooking, dissolve a little salt and optional MSG. Taste a cooled spoonful before adding more seasoning. Turn off the heat, ladle into bowls and cool slightly.
