Let’s make it.

Follow the food, not just the clock.
  1. 01

    Combine oats and milk

Mix oats and milk and let the oats soften into a spoon-coating mixture. If using oats that require longer cooking, prepare them according to the package first.

    Look for

The oats are softened and the mixture is thick but flows.

    Add eggs and optional spinach

Beat the eggs and mix into the oat batter. If using spinach, wash, drain thoroughly, chop and fold it in. Wash after handling raw egg.

    Look for

Egg and oats are evenly combined with no large dry clumps.

Spread thin and cook the first side

Lightly butter a nonstick pan and melt over low heat. Add enough batter for a thin pancake, cooking in batches if needed. Set a 2 min check; turn once edges set and the base is lightly golden.

    Look for

The edges are set and the lightly golden base can be turned intact.

    Turn and check the center

Turn with a wide spatula and set another 2 min check. Continue over low heat until the center reaches 71°C with no liquid egg or wet batter; thicker pancakes need longer.

    Look for

Both sides are golden and the center is fully set at 71°C.

    Plate and cool briefly

Transfer to a clean plate, cool briefly and cut to serve.
