
Tea eggs
Cook the eggs first, then crack the shells and simmer them in spiced tea.
Roast the eggplant until soft, open it carefully and roast again with garlic-cumin sauce.

Preheat the fan oven to 200°C according to its instructions. Wash and dry the eggplant, prick several holes with a fork, place on a rimmed tray and brush the skin evenly with oil.
The dry eggplant has small punctures and an even coating of oil.
Preparation ↗Mince the garlic and chili and mix with light soy sauce, cumin and salt. Wash hands after handling chili and avoid touching your eyes.

Mixing & beating ↗Place the tray on the middle rack and set a 15 min first check. Using oven mitts, pull out the tray and test gently with tongs and a fork. Proceed only when the skin wrinkles and the flesh softens; larger eggplants need longer.

Baking & roasting ↗Set the tray securely and hold the eggplant with tongs. Split lengthwise while keeping the base joined, directing steam away from your face. Loosen the flesh with a fork and spread on the sauce; do not handle the hot eggplant with bare hands.
The eggplant opens like a boat with sauce spread across the loosened flesh.
Preparation ↗Return to the 200°C oven and set a 5 min check. Finish when the garlic is heated through with lightly golden edges and the flesh is soft. Remove promptly if the topping starts to blacken.
The garlic edges are pale golden and the soft flesh holds the sauce.
Baking & roasting ↗Turn off the oven, remove the tray with mitts and lift onto a plate with a spatula. Cool briefly and scoop out the flesh with a spoon.
The opened eggplant holds its shape with garlic, chili and cumin on top.
