Tea eggs
Cook the eggs first, then crack the shells and simmer them in spiced tea.
Thinly slice and marinate beef under refrigeration, then stir-fry with cumin and peppers.

Thaw beef safely, pat dry and slice thinly across the grain. Wash, seed and shred green pepper, cut scallion and chop optional chilies. Lightly crush cumin in a mortar if desired.
The beef slices are evenly thin and peppers shredded.
Knife work ↗Coat beef with soy sauce, starch and marinade oil. Cover, refrigerate and set a 30 min reminder. Wash hands and equipment after raw meat.
The beef is evenly coated and marinating under refrigeration.
Marinating ↗Lightly oil the pan, fry scallion over medium heat and add beef, separating slices. Work in batches if crowded to avoid stewing. Surface color change is only a cooking-progress cue.
The beef is separated and colored outside but still needs a center check.
Stir-frying & sautéing ↗Add cumin and optional chili, then green pepper and salt. Set a 1 min first check and keep tossing until peppers soften slightly and the thickest beef reaches 63°C. Use a thin-food thermometer and continue if needed.
Peppers soften slightly, beef reaches 63°C and cumin coats the meat evenly.
Stir-frying & sautéing ↗After checking doneness, turn off heat and plate. Set a 3 min rest reminder and eat after it is complete.
Beef and pepper are evenly mixed and the meat has completed its safety rest.
