
Tea eggs
Cook the eggs first, then crack the shells and simmer them in spiced tea.
A selected eight-ingredient grain, bean and fruit version, with adzuki beans and peanuts soaked under refrigeration.

Rinse adzuki beans and peanuts, cover separately with water and refrigerate with a 8 hr check. About 3 hours before planned cooking, separately rinse and refrigerate-soak the three grains and lotus seeds. Do not substitute red kidney beans into this method.
Beans, peanuts, grains and lotus are appropriately soaked under refrigeration.
Preparation ↗Discard soaking waters. Put adzuki beans and peanuts in a roomy porridge pot with the listed cooking water. Bring to a boil, then maintain a gentle bubbling with a 30 min check, inspecting liquid and stirring to avoid overflow or sticking.
Beans and peanuts cook in gently bubbling water with room in the pot.
Boiling ↗Add drained grains and lotus and stir. Start a 1 hr check when gentle bubbling resumes. Simmer, stirring the bottom occasionally and adding a little hot water if needed.
Grains begin to open, lotus softens and porridge still flows.
Simmering ↗Check dates and longan are shelled and pitted, rinse and cut smaller, then add with sugar. Simmer with a 1 hr check until beans, lotus and grains have no hard centers, continuing with more water if needed.
All grains and beans are fully tender; porridge is thick but flowing.
Simmering ↗Stir, ladle into bowls and cool slightly before eating; promptly refrigerate leftovers in shallow containers.
