Tea eggs
Cook the eggs first, then crack the shells and simmer them in spiced tea.
Add millet to boiling water, then simmer gently until the grains soften.

Rinse the millet gently once in a fine sieve and drain.
The millet is clean without vigorous rubbing.
Preparation ↗Bring the drinking water to a boil in a roomy pot. Gradually add the millet while stirring to prevent clumps and sticking.
The grains are dispersed with no clumps stuck to the base.
Boiling ↗Maintain a controlled boil and stay by the stove. Stir across the base occasionally. Lower the heat promptly if foam rises to prevent overflow. Start a 6 min check-in when the water returns to a boil after adding the millet.
The water boils without overflowing or scorching at the bottom.
Boiling ↗Reduce to a gentle simmer with the lid ajar. Stir occasionally and check that the grains are tender and the porridge has the desired consistency; continue if needed. Start a 15 min check-in when you reduce the heat to a gentle simmer.
The grains are tender with no hard centers and the liquid has thickened slightly.
Simmering ↗Turn off the heat, ladle into bowls and let cool slightly before eating.
The tender grains are evenly suspended in the porridge.
