Cook the eggs first, then crack the shells and simmer them in spiced tea.
Steam a whole fish with ginger and scallion, check its internal temperature and finish with seasoned soy sauce.

Seasoning ↗Warm the oil in a small pan until shimmering but not smoking. Turn off the heat and carefully pour over the drained garnish, keeping face and hands clear of splashes. Serve warm and watch for bones.
