Tea eggs
Cook the eggs first, then crack the shells and simmer them in spiced tea.
Blanch three fresh mushrooms and broccoli separately, then coat the mushrooms in an oyster-sauce glaze.

Trim and wash the mushrooms, slice shiitake about 0.5–1 cm thick and divide broccoli into small florets. Chop chili, bell pepper and scallion; prepare ginger. Mix starch with the listed slurry water.
Produce is prepared and starch dispersed in water.
Preparation ↗Add broccoli to boiling water and start a 3 min check when boiling resumes. When the stems are easily pierced but hold their shape, drain and place at the edge of the serving plate.
Broccoli stems are tender and florets retain shape.
Blanching ↗Use fresh water with the mushroom-blanching salt and bring it to a boil. Add all three mushrooms and start a 1 min check when boiling resumes. Once hot through, lift out and drain thoroughly; they will cook further in the sauce.
Mushrooms are hot through and thoroughly drained.
Blanching ↗Warm oil over medium-low heat, add ginger, chili and bell pepper, and start a 30 sec check while stirring until fragrant and the pepper slightly softens; do not wait for smoke.
Aromatics are fragrant without scorching.
Stir-frying & sautéing ↗Add mushrooms, soy sauce, oyster sauce and chicken seasoning. Re-stir the slurry and pour it in while stirring; cook until bubbling and lightly coating the mushrooms. Add cooking wine and scallion, stir and heat throughout without reducing to a dry paste.
Mushrooms are hot through with a glossy, flowing coating.
Slurry thickening ↗Plate the mushrooms beside the broccoli and serve warm.
