
Tea eggs
Cook the eggs first, then crack the shells and simmer them in spiced tea.
Cook rice, century eggs and lean pork in an appropriate porridge program, then finish with clean prepared greens.

Measure rice by volume, rinse and place in the cooker with porridge water. Cut pork into small pieces on a separate board without rinsing raw meat, coat with oil and add. Peel and chop century eggs, shred ginger and add; wash after raw pork.

Preparation ↗Confirm ingredients stay below the porridge fill line and use a manufacturer-supported porridge program suitable for raw meat additions. Never leave raw pork overnight on a delayed start or treat keep-warm as cooking.

Simmering ↗Wash and chop scallion, coriander and lettuce. Blanch lettuce in a separate pot of boiling water until softened, then drain. Mix soy, oyster sauce, salt and pepper in a clean bowl.

Blanching ↗When the program finishes and opening is safe, check rice has no hard center. Use a suitable thermometer for at least 63°C in the thickest pork center; continue an appropriate cooking program if needed.

Heat control ↗Mix in blanched lettuce, herbs and seasoning and heat through, then stop heating or switch off as the cooker instructions direct; do not lift a hot inner pot. Start a 3 min rest timer and serve after it finishes.
Soft congee holds cooked pork, century-egg pieces and wilted lettuce with herbs mixed through.
