Tea eggs
Cook the eggs first, then crack the shells and simmer them in spiced tea.
Cut even slices, steam until soft and test the centers with a skewer.

Wash the pumpkin, stabilize it on the board and cut it open. Remove the seeds and stringy flesh. Peel if appropriate for the variety, taking care with hard slippery skin.
The pumpkin is clean and deseeded and the board is stable.
Preparation ↗Cut into slices about 2 cm thick and arrange evenly in a heatproof dish.
The slices have similar thicknesses so they cook evenly.
Knife work ↗Add enough water according to the steamer instructions and fit the rack securely. Keep the water below the food and bring it to a boil.
The water is boiling and the rack is stable.
Boiling ↗Carefully place the dish in the steamer, cover and maintain steady steam. At the check point, test the thickest piece with a skewer. Continue if it does not slide through easily. Start a 15 min check-in after placing the pumpkin over boiling water and covering.
A skewer slides easily through the thickest part.
Steaming ↗Turn off the heat and open the lid away from you. Remove the dish with oven mitts or a plate lifter and let cool slightly before eating.
The pieces hold their shape but are soft inside.
