
Tea eggs
Cook the eggs first, then crack the shells and simmer them in spiced tea.
Soak wood-ear mushrooms briefly, cook and drain, then toss with a garlicky tangy dressing.

Rinse the dried mushrooms under running water, put in a clean container with the soaking water and set a 45 min check. Keep total room-temperature soaking within 2 hours or soak under refrigeration for longer. Discard any that become slimy or smell abnormal.
The mushrooms are expanded and pliable without slime or an abnormal smell.

Mixing & beating ↗Lift out the mushrooms, drain thoroughly and toss in the dressing. Cool briefly and eat promptly; refrigerate if waiting rather than leaving the dish at room temperature.
The mushrooms are evenly dressed without excess cooking water in the bowl.
