
Tea eggs
Cook the eggs first, then crack the shells and simmer them in spiced tea.
Blanch small cauliflower florets, stir-fry with garlic and finish with a little steam.

Wash and break cauliflower into similarly sized small florets and slice thick stems thinly. Peel and slice garlic and measure the water for the pan separately.

Knife work ↗Bring water to a boil, add cauliflower and set a 2 min check once boiling resumes. Drain thoroughly when the stems begin to soften but hold their shape.

Blanching ↗Heat oil over medium and sauté garlic until fragrant without blackening. Add drained cauliflower, raise to medium-high and set a 2 min check, tossing to prevent scorched spots.
Cauliflower is evenly coated with oil and garlic is pale golden, not burnt.
Stir-frying & sautéing ↗Toss with salt, carefully add the measured pan water along the side and cover. Once steady steam appears, set a 1 min check. Continue if stems are too firm, keeping a little liquid at the base.
A fork enters the stems readily while the florets stay intact.
Simmering ↗Open the lid away from your face, toss and let excess moisture evaporate briefly before plating. Avoid breaking up the florets or scorching the pan dry.
The tender-crisp florets are intact without a pool of water.
